It cannot currently be calculated from first principles theory (QCD), nor can this regime be directly probed through terrestrial experiments. Neutron stars (NSs) therefore provide a unique laboratory for studying cold dense matter. In this talk I will describe progress in this field obtained by utilizing both gravitational-wave and electromagnetic observations of NS mergers. An overview will be given of several different methods of constraining the equation-of-state using NS mergers, the strengths and caveats associated with each will briefly be discussed, as will the future outlook for this newly-emerging field.
